Frozen with Love - Summer Berry Mess

The best thing about an 'Eton Mess' is in the name, it's a mess - go mental! Anyone can make it and you can tweak it to meet your personal taste. Traditionally Eton Mess is a summer dessert made from strawberries, however I decided to make mine with a mix of frozen Summer Fruits (raspberries, blackberries, blackcurrants and redcurrants). The beauty of frozen fruit and veg is that it is always in season, preserved for year round enjoyment.

You will need (serves 4)
1 Bag of Frozen Summerfruits
4 Meringue Nests You can buy these pre-made or make them in advance and freeze them until you need them. Meringue can be kept in an airtight container, in your freezer, for up to one month. Contact me for a Cheffy Daddy meringue recipe.
600ml Whipping or Double Cream
100g Chocolate

All you have to do is...

I'm currently on the 'No More Mummy Tummy' Mutu System, so I have to save this one for treat days - definitely worth the wait though.

We've recruited some chefs already this month. Don't forget to add your post to the Frozen with Love Oui Chef! link up. Just add your post below - it can be photos, recipes, ideas, stories anything so long as it's linked to food and to the theme (Valentines and Favouring Frozen). For more info on Oui Chef! go here, or for more info on this month's theme go here. And, of course, there are prizes.
